Jimado

The process of harvest known as “Jima or Jimado” is usually between 6 and 8 years of maturity of the plant, thus giving it the perfect life cycle to obtain its own elements and requirements that lead to final matury.

This part of the process is considered one of the most physically complicated, since the Jima is a constant and exhausting job that requires some special hand tools to cut the plant to its desired size.

Once the necessary quantity has been obtained, it is time to harvest the product. For this work it is sometimes necessary to use horses or mules depending on the access or how complicated the trajectory can be to take the product out of where its habitat was. If that is not the case, the product is loaded in trucks and taken to its final destination which is the Tavern, in order to follow up on its process.
